Teff banana and walnut porridge

Ingredients

1/4 cup brown teff grains
1/2 cup coconut milk
1/4 cup water
1 medium banana
1 tablespoon raisins
handful of walnuts
coconut cream, to serve

Method

1. Combine the water, coconut milk and teff in a sauce pan over medium high heat. When the mixture comes to a boil, turn the heat down to medium low and let simmer for about 15 minutes.
2. In the mean time, cut the banana into coins.
3. Once the teff is cooked, transfer to a medium bowl and top with raisins, walnuts and more coconut milk or a scoop of coconut cream if desired.
