Teff
Teff is an ancient Ethiopian grain the size of a poppy seed that’s set to infiltrate mainstream menus much like quinoa. In fact, the two grains are similar in flavour, texture and nutritional benefits. Like quinoa, teff is gluten free, high in protein, fibre, iron and resistant starch. Teff can also made ground into a flour for baking breads, pancakes, muffins etc and blending in smoothies.
