Apple & Cinnamon Muffins

  • 1 cup Ivory Teff Flour
  • 1 cup Almond Meal
  • 1/2 cup Coconut Milk
  • 1/3 cup Brown Sugar
  • 3 Apples (grated)
  • 2 Eggs
  • 3 tsp Cinnamon
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • Pinch of Salt


  1. Grate the apples.
  2. Combine all dry ingredients (ivory teff flour, almond meal, brown sugar, cinnamon, baking soda, salt) in one bowl and mix.
  3. Combine all wet ingredients (coconut milk, apples, eggs, vanilla) in one bowl and mix. Combine dry and wet ingredients into one bowl and mix.
  4. Fill muffin liners with mixture (half way).
  5. Bake at 180 degrees for 25 minutes.
  6. Enjoy!
